now i dont want to sound to stupid. but do you HAVE to grow a bonsai from seed or sapling ? or can you take a cutting from a larger tree ? ( an acer for example... a maple of some sort ) and plant this and grow it ? or would it just not work at all ??

My previous reply has disappeared sorry.
Cuttings, air layers and nursery material are all good sources of bonsai material. They all beat seed by several years in maturing.
Maples are a good subject with the exception of Sycamore which has rather large leaves for the job.
Softwood cuttings from the current year's growth are best taken in late spring while hardwood cuttings with more lignified stems are best taken in autumn.
If you need any guidance on technique please ask.
